Breakfast for lazy people…
While I love breakfasts, it’s pretty tough to get up and be completely motivated to whip up a delectable meal at 6AM. So, I have crafted many quick leftover recipes all under 10 minutes – but still fabulously delicious. 😉
This is one of my absolute favorites, and since I love brussels sprouts I usually have them on hand and ready to go. See the recipe below:
Items Needed:
2 bags of brussels sprouts
2-3 sweet potatoes
Sliced prosciutto
Eggs (per serving)
Extra Virgin Olive Oil (EVOO)
Garlic powder
Onion powder
Chili Pepper Flakes
Salt & Pepper
Veggies – Left overs – I usually pair this with any protein for dinner:
1-2 bags of brussels sprouts cut in 1/2
2 sweet potatoes – peeled and cubed
Directions:
toss in a big bowl with:
2 TBSP of EVOO
1 TSP of red pepper flakes
1 TSP of garlic powder
1 TSP of onion powder
salt & petter to taste
Roast in oven for 30-40 min at 400 degrees – until golden brown
Eggs: 2 – 3 fried (I usually fry mine all the way through since I am not a fan of runny eggs or yolk) this usually takes me about 3 minutes total.
Prosciutto: Remove 2-4 slices to layer – no need to warm, veggies and eggs will heat up – remember, its 6AM and we are lazy!
Directions to plate: I usually take the brussels and sweet potato mix, place on the bottom, layer with sliced prosciutto, then top with the fried eggs.
