Whole30: 1/30

Day one, of the @whole30! Meals 1, and 2 were prepped Sunday to avoid bad choices and meal 3 was cooked at home fresh! Had dinner early since I was struggling to get there!!!

It’s only day one so I know there will be bouts of hunger, anger, emotion and most of all, self doubt. But I’m positive if I can get over this hump, I will sail into week two feeling more energized, refreshed and healthier…

Meal 1: leek, spinach, mushroom frittata | ½ an avocado | handful of blueberries…

Meal 2: Seasoned Chicken salad with cucumbers, apples, walnuts, greens and an olive oil/balsamic vinaigrette…

Meal 3: seasoned ground turkey with cauliflower rice. We were hungry so we threw and egg on top. .

Woke up with a headache and was a bit sluggish. Nothing that surprised me after changing up my diet. But happy to get through another day with success!!!

Meal 1: 2 poached eggs with micro greens and chili pepper flakes, handful of blackberries, some left over chicken from yesterday’s lunch, and ½ and avocado!!!

Meal 2: same chicken, walnut, apple, cucumber salad with olive oil/balsamic vinaigrette from the Whole30 book!!!!

Meal 3: Snap pea, Shrimp & shiitake mushroom stir fry from the Whole30 Cookbook. It was SUPER yummy!!!

Breakfast for Lazy People

Breakfast for lazy people…

While I love breakfasts, it’s pretty tough to get up and be completely motivated to whip up a delectable meal at 6AM. So, I have crafted many quick leftover recipes all under 10 minutes – but still fabulously delicious. 😉

This is one of my absolute favorites, and since I love brussels sprouts I usually have them on hand and ready to go. See the recipe below:

Items Needed:
2 bags of brussels sprouts
2-3 sweet potatoes
Sliced prosciutto
Eggs (per serving)
Extra Virgin Olive Oil (EVOO)
Garlic powder
Onion powder
Chili Pepper Flakes
Salt & Pepper

Veggies – Left overs – I usually pair this with any protein for dinner:
1-2 bags of brussels sprouts cut in 1/2
2 sweet potatoes – peeled and cubed
Directions:
toss in a big bowl with:
2 TBSP of EVOO
1 TSP of red pepper flakes
1 TSP of garlic powder
1 TSP of onion powder
salt & petter to taste
Roast in oven for 30-40 min at 400 degrees – until golden brown

Eggs: 2 – 3 fried (I usually fry mine all the way through since I am not a fan of runny eggs or yolk) this usually takes me about 3 minutes total.

Prosciutto: Remove 2-4 slices to layer – no need to warm, veggies and eggs will heat up – remember, its 6AM and we are lazy!

Directions to plate: I usually take the brussels and sweet potato mix, place on the bottom, layer with sliced prosciutto, then top with the fried eggs.

And voila, ENJOY!

Always, coffee…

I know I said I would write every Sunday about new coffee shops I explore and then, I missed TWO Sundays in a row. In my defense, I had family in town last weekend so was playing tour guide around the city. THEN yesterday, it was too hot to do anything. Literally anything! But no worries, I have LOTS to catch you up on. I visited many coffee shops since I last wrote, and am fully prepared to give you the rundown.

LAST Sunday (8/27) with family in tow, I went to Crema (again!), Rocking Frog Cafe on SE Belmont, and Good Coffee on SE 12th and SE Salmon. ALL awesome places, and each with their own unique thing that makes ME love them and continue my patronage. Rocking Frog has great coffee from local roasters and FRESH HOME MADE DOUGHNUTS that are indescribable. Some of the best I have ever had. If you are looking for some sugar to go with your black 16oz Americano like me, this is where you need to go. They have other food items, like sandwiches (breakfast ones and lunch), salads and pastries. Then theres Good Coffee which features local roasters, and recently started roasting their own beans. I LIVE off of the Gluten Free Banana-Chocolate muffin they serve along with the Marion berry scones (and I’ve recently found this gem at other coffee shops around town – the maker os this delicious treat is Bakeshop on Sandy Blvd.). All good options for various reasons. If you haven’t been, get off your ass and go!!

Now yesterday, (9/3) I spent time at several coffee shops. I stopped by NEVER coffee on SE Belmont, this place is newer to our neighborhood but feels like we were lost without it. They have awesome coffee and crazy roasts that you can try. They, too, like Good Coffee, sell Bakeshop goods and I love the cinnamon roll croissant they offer. Again if you need some sugar to go with your black coffee this is an awesome way to go. Not to mention this is across the street from my pups Vet, so I can kill two birds with one stone. Vet for the pup, coffee for me. Then, there was Either/Or . This little light of life is located in Sellwood, one of my MOST favorite neighborhoods. Andrew and I find ourselves gravitating there on most weekend for coffee and to walk the dogs around the neighborhood. Its a cute little family friendly area that we absolutely love. We found Either/Or through searching the TOP coffee shops in Portland. We came, we saw, we fell in love and have been regulars ever since. When you’re looking for AWESOME coffee, this is where you come. They offer beverage flights, espresso flights, THE BEST CORTADO I have ever consumed, and a mean Americano. Not to mention their drip coffee is some of the best around. They feature local roasters, and tell you how to drink it, what to pair it with and why its best! Its like an education on coffee, and learning what you like. They serve baked goods as well as Jordan’s Bread from a local maker. Its pretty delicious, served toasted (upon request) with butter.

As you can see, coffee is what I enjoy on weekends. Since I completed one round (of many…eventually) of the Whole30 (if you want more info on how to completely change your life for the better, click the hyperlink!), I have swapped dive bars for coffee bars; shots of tequila and whiskey for many shots of espresso. I can say the hangovers are better, I get more done, and I feel good!

If you haven’t checked these places out, obviously I recommend them. While coffee shops can be overwhelming in this City, I hope to provide somewhat of a guide to where you can start; whether you are a coffee connoisseur or just a coffee lover like me, Portland has whatever you might need!

Coffee in the morning…

Sundays are for sleeping in, drinking coffee and eating pastries. Well, everything but the sleeping in part. With two dogs, sleeping in is never an option, since neither one knows the difference between a Sunday or a Monday. But I wanted to take a moment and share some of my FAVORITE Portland coffee shops. I love to spend weekends exploring and caffienated.

So every Sunday I will feature one of the many awesome Coffee shops that inhabit Portland…

Today we walked the pups to Crema on SE 28th and SE Ankeny. They have awesome pastries with an in-house bakery. Their Chocolate Espresso bread is LIFE CHANGING! and at $2 a slice, it’s dangerous. I have spent both Saturday and Sunday morning this weekend enjoying coffee and conversations with Andrew after getting our bodies moving with a quick walk to Crema. We figure, if we are walking there, then its not too bad if we get a pastry (or two).   Crema’s coffee is also pretty good. They feature local roasters from around town. This weekend they featured Upper Left (my ULTIMATE favorite roaster in Portland), and Coava… another awesome roaster. My drink of choice is either an americana or cold brew. Andrew’s is a nice big cappuccino. We both look for different things in our coffee which is always fun to debate whether or not we like a place, their coffee, and why! Being a coffee snob, this is how I/we judge wether a coffee shop is worth a second visit. Crema is a staple coffee shop in our household. Definitely worth a visit! 🙂

It’s official, I suck at this…

Learning to blog is something I have wanted to do for a very long time. It might seem simple enough, just write… but the overwhelming truth is that, it’s not that simple. The fact that someone could read this (most likely not) is scary… someone reading my words… what if they think I suck? Even worse, what if I do suck? What if they criticize what I write? How do I deal?

Well… that part is simple, I don’t. I have decided that I just done care. It took all of my 20’s to stop caring about people I don’t know, and surround myself only with good people.

So here it is, my first blog. What will this blog-site be about?

It’s simple, really, everything I am “absolutely obsessed” with. So, mostly food, recipes, wine/cocktails, travels, my dogs, and girly sh*t. [Wait, is it okay to swear in a blog? Well, since I am the creator of this, it is.]

So there it is, I have gotten over the hump. Here is my FIRST (ever) blog and, true to form, it sucks. But I promise it will get better. And to the one person who reads this, thank you. Hopefully I haven’t scared you away with my random thoughts.
